Tacos get a twist with Old El Paso - review/giveaway




When I tell the kids that it's taco night, there is a happy moment. Tacos are a big hit in our house. I don't know if it is that they can eat with their hands or make their own dinner, but tacos always bring out the smiles. Personally, there are times when I want our dinner to be different. Don't get me wrong, a good grilled chicken taco with habanero salsa always tastes good, but occasionally we need to get out of the box. 

Old El Paso challenged my family to put a twist on the taco. So here's what my twist on the traditional taco - fish tacos with broccoli slaw. The recipe is super easy. 

First, buy a white flaky fish. Personally, we use tilapia. It is usually easy to find and inexpensive. Pick a marinade for the fish. We have tried a few, but a sundried tomato or a white balsamic has worked best in our house. Let the fish marinate for a couple of hours. 

While the fish is resting, get the other items ready. I like a broccoli slaw or even a kale mix as the crunch for the taco. Every taco needs some crunch. If your kids won't eat these options, lettuce works too. 

Personally, we like to grill the fish. It takes just a few minutes to cook.  If you don't grill, stove top cooking works too. 

Then place all the items on plates for everyone to assemble their tacos. From the soft flour tortillas to a side of refried beans, everyone can add or subtract as they wish.
