Think beyond the taco, get Mexican inspired with Old El Paso - review/giveaway

In our house, we are trying to think beyond the box, or in this case, the taco. My kids love Taco night. The fun of making your own dinner can make even a bad day seem better. Since I write about food and chefs, I want my kids to explore more flavors and ingredients. If a taco is good, what other Mexican inspired flavors can be great.

Since my kids are familiar with the taco, we started with that premise. What else can we do with a tortilla?  Quesadillas are a quick, easy favorite. But, what else lies in the pantry, produce aisle and spice rack?

Getting my kids to eat vegetables was a first a struggle. I found that my son loved salsa. Salsa, when made fresh, can be a great source of vegetables. Combining tomatoes, onions, peppers and spices is simple and easy. I found that my son would eat more variety if I paired the dish with salsa.

We started with traditional salsas on top of a quesadilla. We have since expanded to spicy, jalapeno salsas to tangy verde salsa, he was more open to flavors, consistencies and ingredients.

While I love that my son is more daring with flavors, more importantly my son enjoys cooking with me.  From chopping the veggies to measuring the ingredients, this time in the kitchen is time to share our love of food. Since my son is vested in the food he cooks, we have opened even more avenues of food, flavors, and cuisines.

  11. I love using my taco holders and making it dinner a buffet style with cheese, sour cream, lettuce tomato, meat, sauce etc all out for everyone to choose what they desire

  33. Because everyone in my family is so picky (hubby won't eat veggies, 13 year old hates lettuce, 17 year old likes everything extra spicy, etc.) I typically make a "bare bones" version of any Mexican dishes and then let everyone add on their own toppings and spices buffet-style.
