Sometimes when planning a week's worth of dinners, our family can get into a rut. There are numerous variations on chicken, steak and fish but sometimes everything just blends together. That's why our family has started the breakfast for dinner night.
What's breakfast for dinner? It's having some pancakes or French toast in place of steak and mashed potatoes. Log Cabin has launched a campaign, Breakfast for Dinner. It's a great way to break the dinnertime rut and give the kids a little treat.

So, I bet you are thinking, how can breakfast for dinner be good for you or even a fast, easy dinner. Simple, use good ingredients and plan ahead. A simple idea is to do baked French toast. I make my French toast in a pyrex pan when I'm making breakfast for the kids.
Here's a modified recipe. Take 1 loaf of raisin bread (I use Panera's cinnamon raisin bread). Cut the bread into 1 inch slices. Place sliced bread in a buttered pan, create 2 layers. Mix together 8 eggs, 2 cups of half & half, 1 cup milk a dash of salt, cinnamon, nutmeg, vanilla and sugar to taste. Pour the liquid over the bread. Cover the pan and place in the refrigerator for the day (or over night). Bake covered pan in a 375 degree oven for 25 minutes.
If your family doesn't like raisin bread, you could use challah bread, french baguette or any bread that you like. Also, you can top the mixture with nuts or sliced fruit when it comes out of the oven. We had our raisin french toast with pecans, cranberries and of course, Log Cabin syrup.
