Alpina Greek yogurt with Granola brings new flavor to chicken fingers - review

Greek yogurt has become a popular food item. The added benefits from this type of yogurt has made it a breakfast favorite or a go to snack. But, Greek yogurt can be more. Alpina Foods can turn that yogurt container into  a flavorful dinner. 

In our family menu planning, chicken fingers are a staple. I know that the kids will eat this choice without complaining. But, there are aspects to the traditional chicken fingers that could stand a little improvement. When Alpina Greek Yogurt told me that it could put some vest into our meal, I was ready to try it.

If you aren't familiar, Alpina Foods offers Greek yogurt and Greek Yogurt with Artisan Granola. These products are created using an authentic straining process, and are the combination of the simplest ingredients: milk, active bacteria cultures, and fruit. The Granola used in the Alpina Greek with Artisan Granolas is certified gluten-free granola mix-ins. It was created by a health and wellness chef and is prepared by Udi’s Gluten Free.

Alpina Greek is suggesting families think beyond the yogurt container. Of course, yogurt is tasty as a breakfast or snack, but it can be used in many different recipes. From a decadent dessert (think the base for cheesecake) or an ingredient in your favorite muffin recipe, the Alpina Greek can add some nutrients and elevated tastes for a traditional dish.


Here  is Alpina's suggested recipe for chicken.


Chai Spice Chicken Fingers

INGREDIENTS
1 container of Alpina Greek Honey yogurt or Vanilla Bean with Artisan granola
1 cup whole grain cereal flakes
8 oz organic chicken tenders or 1 boneless boneless chicken breast cut into strips
(use extra firm tofu as vegetarian substitute)
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 teaspoon salt


DIRECTIONS / STEPS
Pre-heat oven to 425 degrees
Line a cookie sheet with parchment paper
Place granola, cereal flakes and spices in a zip top bag
Using the flat side of a meat mallet or a rolling pin, crush flakes and granola until fine crumbs
Place chicken, salt and Greek yogurt in a large zip top bag
Close bag and shake to evenly distribute yogurt with the chicken
Coat each piece of chicken with the cereal/granola mix and place on parchment paper
Lightly spray chicken with olive oil spritzer
Bake for 8-10 minutes until golden brown and chicken feels firm to the touch

Serves: 2
Prep Time: 8-10 minutes

 I tried this recipe at home for the kids. It was very easy to make. I liked how the yogurt allowed the coating to adhere to the chicken. The tenders were crispy and retained their coating during cooking. Personally, I liked the simplicity of having a single ingredient in the house that has a variety of uses. It increases my dinner options without having to do additional shopping.
